This Añejo tequila from Tres Mujeres in Amatitán, Jalisco (NOM 1466), represents Batch 2 of Santanera’s distinguished Selección de Bosques series and is crafted under Maestro Tequilero Pablo Lara G. Made from 100% fully matured seven-year Blue Weber agave harvested from the organic estate El Llano Grande, it is cooked in a traditional clay steam oven, milled with a mechanical roller, and undergoes spontaneous fermentation with ambient yeast in open-air stainless steel tanks before being twice distilled in stainless steel pot stills. The tequila is aged in a thoughtful combination of barrels, including new medium-toast American oak and a light noisette-toast Colbert French oak barrel made from 400-year-old Tronçais forest oak. The resulting spirit delivers layered aromas and flavors of dry honey, toasted vanilla, walnut, warm spices, and cooked fruit, lifted by delicate notes of caramelized nuts and brown butter. Non-chill filtered, Jay Kosher Certified, and bottled at 40% ABV, it offers a refined and expressive Añejo profile.
