The mezcal is a fiery, smooth, sweet and savory liquid with a complex flavor that goes down easy. It’s a mixture of several agave plants, the “heart” of the plant. The production process of the mezcal is very involved and time-consuming. The agave hearts are roasted and crushed into a molasses-like syrup. This syrup is then cooked with water and distilled in copper stills.
